Baked Peaches
and Plums

- 2 tsp. fresh ginger, grated
- 1 lb. peaches, peeled, pitted and cut into thick slices
- 3/4 lb. plums, pitted and cut into thick slices
- 1 cup apple cider
- 2 Tbs. sugar
- 1/2 lb. almond cookies, crumbled
- 2 cups strawberry ice cream

Preheat oven to 375°F.
Combine first 5 ingredients in a bowl.
Mix thoroughly and transfer to a shallow baking dish.
Sprinkle with crumbled almond cookies.
Bake 45-50 minutes or until fruit mixture is syrupy.
Serve ice cream over baked fruit.
