logo Melba Nectarines with Frozen Yogurt

 

  • 7 ounces sweetened frozen raspberries, thawed
  • 2 Tbs. plus 2 tsp. sugar
  • 2 tsp. lemon juice
  • 2-2/3 cups lowfat vanilla frozen yogurt
  • 2 ripe nectarines, sliced

Press berries through a sieve to remove seeds.
Combine raspberry purée and sugar in a saucepan over medium heat.
Cook 3-5 minutes, stirring constantly, until sauce begins to thicken.
Stir in lemon juice and mix well.
Divide frozen yogurt among individual dessert dishes and top with nectarine slices.
Drizzle with raspberry sauce.
