  • 2 tsp. fresh ginger, grated
  • 1 lb. peaches, peeled, pitted and cut into thick slices
  • 3/4 lb. plums, pitted and cut into thick slices
  • 1 cup apple cider
  • 2 Tbs. sugar
  • 1/2 cup almond cookies, crumbled

Preheat oven to 375°F.
Sprinkle ginger in the bottom of a shallow baking dish.
Alternate layers of peaches and plums over ginger.
Pour cider over fruit.
Sprinkle with sugar and crumbled almond cookies.
Bake 45-50 minutes or until fruit mixture is syrupy.
Serve with frozen yogurt or ice cream.
