logo Simple Apricot Almond Tart

serves 8

  • 1 tsp. all purpose flour
  • 1 x 9 inch biscuit or short pastry crust
  • 1/4 cup apricot jam
  • 3/4 cup slivered almonds, very finely chopped
  • 8 apricots, peeled and halved
  • 1/3 cup sugar
  • 1 Tbs. unsalted butter, cut into small bits

Preheat oven to 450°F.
Spread flour over crust and pierce all over with a fork.
Bake pie crust about 10 minutes, until golden (if not already baked).
Reduce oven to 375°F.
Spread jam over bottom of crust and sprinkle with almonds.
Place apricots, cut side down, over almonds, filling crust completely.
Sprinkle with sugar, dot with butter and bake about 1 hour, until apricots are tender and filling is syrupy.
Cool on a rack before serving
