South Western Peach Salad

- 2 cups romaine lettuce leaves
- 4 fresh peaches, cut into wedges
- 2 red bell peppers, thinly sliced
- 2 tablespoons chopped cilantro
- Cilantro sprigs, optional
- 4 green onions, sliced, optional
- 1/4 cup salsa
- 2 tablespoons white vinegar
- 1/4 cup nonfat plain yogurt
- 1 tablespoon minced cilantro
- 1 tablespoon minced green onions

Line individual plates with lettuce.
Arrange peaches and bell peppers in a circular spoke fashion on lettuce.
Sprinkle with cilantro.
Garnish with cilantro sprigs and green onion
To prepare dressing, combine salsa, white vinegar, yogurt, cilantro and green onions in a small bowl.
Serve with dressing.
